How to store beets in an apartment so that they are well preserved until spring?

Do you have your own vegetable garden or do you prefer to buy vegetables in the store, in any case you will definitely have to solve the question: "How to store beets?" After all, this tasty and healthy root vegetable is needed in the kitchen all the time, and at least a few things should be at hand, in case you want to cook salad, vegetable cutlets or borscht.

Ways to save beets in the winter at home

You can buy a kilo of beets every time you need them and store them in the refrigerator for a while. But zealous housewives know that it is much more profitable to stock up on the necessary amount of root crops in the fall so that it will last until next season. In spring, as a rule, the retail price of beets rises and their taste becomes much worse. All that remains is to figure out how to save the beets for the winter so that the money is not wasted.

For the owners of summer cottages living in high-rise buildings, the problem of how to store beets in an apartment is no less relevant: it takes so much time and effort to grow these root crops in a season that it will be just a shame if half of the crop decays ahead of time.

Ideally, storage of beets in winter should be carried out in a special storage, in a cellar or in a basement. In these rooms, it is convenient to maintain the desired humidity level and a suitable temperature for beets. But what should the residents of city apartments do that have neither a cellar nor a basement? Fortunately, at home, you can save beets until spring - choose the most suitable method!

Beets are best preserved at temperatures up to +2 degrees, but the humidity of the air, on the contrary, should be high - up to 90%. At high temperatures, beets will quickly sprout tops, the roots will wither and deteriorate.

Ideally, storage of beets in winter should be carried out in a special storage

How to keep beets in an apartment:

  • put the roots in plastic bags (just do not tie them) and put them where the temperature is cooler - next to the balcony or outer door;
  • in the presence of a glazed balcony, beets can be taken out there for the winter, laying them in layers in wooden boxes, and generously sprinkling each layer with sand, shavings, or dry sawdust - root crops should not touch each other;
  • so that the beets on the balcony do not freeze in frost, the boxes are covered with old blankets on top;
  • if you store potatoes in bags on the balcony, beets can be poured on top of it - from such a neighborhood, both those and other root crops will only benefit.

Due to the thick skin of the beets, the moisture from the roots evaporates rather slowly, so even at room temperature, the beets can be safely stored for at least a week. The main thing is to keep root crops as far away from heating appliances as possible.

To prevent the beets on the balcony from freezing in frost, the boxes are covered with old blankets on top.

Storing beets at home is also possible in the refrigerator, but no longer than a month, while the roots should be wrapped in plastic wrap or put in a plastic bag with holes made in it. Make sure that condensation does not form in the bag.

What needs to be considered to extend the shelf life of beets?

Whether the roots remain as firm, tasty and sweet in spring as they were after harvest depends not only on how you store them, but also on the original quality of the beets intended for storage. Therefore, in addition to knowing how to properly store beets in winter, you need to stock up on the knowledge which root crops can be safely left until spring, and which are better to eat right away.

Dry the entire harvested crop a little under the sun, gently shake it off the ground with a dry cloth and sort

So, if you grow beets yourself, pay special attention to the choice of the variety - plant those varieties that are characterized by increased keeping quality and give root crops about ten centimeters in diameter. Too small vegetables dry out faster, and too large beets have a weak taste and are fibrous.

When digging up the beets, be careful not to damage the skin. Dry the entire harvested crop a little under the sun, gently shake it off the ground with a dry cloth and sort, removing dented, damaged, rotted and other diseases. The tops should be trimmed with scissors, leaving no more than 1 cm.

Store potatoes in a cool, dark place. Collect sun-dried potatoes in wooden crates without mixing the varieties. It can be stored in the closet or in the entrance, if this is permissible. On the balcony, it will freeze and be sweet.

You can use the Finnish way of storing potatoes. For this, the potatoes are cleaned of clods of earth and placed together with dried sphagnum moss in boxes. Carrots in winter. Rules for laying carrots for storage

I would like to note that late-ripening varieties may not have time to ripen in the conditions of Russia. It all depends on the region you live in. Therefore, varieties with an earlier ripening period are best suited. For example: Incomparable, Nevis F1, Nantes 4, Nantejska, Mango F1, Canada F1, Gribovchanin F1 and other varieties.

Ripening dates for carrots. It is advisable to calculate the harvest time in advance, in the spring. Why does this question arise? Yes, because the carrots that were pulled out ahead of time do not have time to collect in their composition a sufficient amount of sugars. This means that the taste will be an order of magnitude lower.

Conversely, when we overexposed the vegetable. Here, there are too many sugars and amino acids. This, in turn, also affects the taste of root crops. Also, such carrots attract pests such as mice.

Further, we note that not all carrots can be stored for a long time in winter. For storage, there are special varieties that can be stored for a really long time without losing their taste. For example: early ripening (Bangor, Laguna), mid-ripening (Vitamin, Samson, Shantane), late ripening (Flaccoro, Queen of Autumn, Carlena).

Carrots are harvested when the lower leaves begin to turn yellow. And yet, we stop watering 2 weeks before harvesting. As a result, root crops are much better stored in winter.

Trimming the tops

Pruning leaves. This is a very important stage. Here, we carry out the work in 2 stages, where first we cut off the tops just above the head, and then the second time we cut off the head completely together with the growth point (1 cm). Pruning according to the rules does not allow carrots to sprout in the winter. And therefore, root crops do not wither.

Drying of carrot fruits. The question "how to store carrots" will be successfully resolved if the drying process is done correctly. It looks something like this. We dry in the sun for 2 hours - 3 hours. Further, within 8 - 12 days, drying takes place under a canopy, where the temperature should be within 10 ° C - 14 ° C above zero (this is important). The process is the same as when preparing potatoes for storage. At the same time, the vegetables seem to reach the desired state, where the wounds are healed and diseased fruits appear.

Before we put the carrots for storage in the basement (or somewhere else), we carefully examine them and remove the spoiled fruits.

The best conditions and methods for storing beets

Beets are best stored in sand boxes in a cool, dark place. Conditions that need to be created in it:

  • humidity level 95-90%
  • temperature 0 ... +2 о C
  • natural ventilation is desirable.

Under such conditions, root crops can be stored until spring and even longer. The most important thing is to maintain the temperature, especially the first 1-2 months after laying the beets, because if it rises to at least +4 o C, the vegetables will begin to sprout tops, and this will significantly reduce the shelf life. Also, the temperature should not be allowed to drop below 0 o C, otherwise the roots will freeze. Then, again, they will not be saved for a long time.

It is impossible to create such storage conditions for beets in an apartment - only in the basement or cellar. The sand in the boxes should be clean sifted river, preferably washed and calcined in the oven or dried in the sun. We put it on the bottom of the container with a layer of 8–10 cm. Then we put the vegetables so that they do not touch each other. Sprinkle them with sand on top, making a layer of 2-3 cm above them. So we lay the beets to the very top of the box. The condition of the root crops should be checked every month. Those that have begun to deteriorate must be removed, and the regrown tops must be cut off. Here's how to properly store beets so that they will definitely stay until spring.

  • In plastic bags with ventilation holes with a capacity of 35-40 kg. They are hung up and not tied tightly for air access.
  • In a chest with potatoes. Place the beets on top of the tubers in 1 layer. The potato will give excess moisture to the roots that they need.
  • Small pyramids (heaps) on shelves or in small boxes with holes for air circulation. Shelves and drawers should be at least 15 cm above the floor.
  • In peat, table salt or sawdust. They, like sand, are poured over root crops, laid in layers in boxes. If in sawdust, then it is advisable to check the condition of the root crops more often than once a month.
  • Loose in a separate chest, the bottom and walls of which are lattice, with cracks.

Saving root crops in the cellar

These methods, if properly performed and maintained in the required conditions, can also save vegetables until spring.

Before storing the beets, it is advisable to powder it with sifted wood ash or roll it in chalk powder. This will protect root crops from diseases and slow down the spread of spoilage from one to another. It is better to store small vegetables separately from large ones.

Is it possible to keep beets in the fridge or freezer

Within 1 month, beets are successfully stored in the refrigerator. Some root vegetables may last longer, but should not be kept longer. Over time, they lose moisture and vitamins.

Preparing vegetables for storage includes simple steps:

  1. Pre-selected medium-sized fruits must be carefully cleaned of dirt, but not washed.
  2. Wrap each fruit separately in parchment paper or cling foil.
  3. Fold into the vegetable compartment.

For about the same time, beets are stored in the refrigerator in plastic bags. You need to wash the roots and put them in bags with holes. Plastic containers can be used for this purpose.

An alternative storage method is freezing vegetables... To do this, chopped or chopped vegetables are packed in plastic bags or food containers and put in the freezer. This method is best used when there is no way to apply other storage methods. With this approach, root crops lose most of the nutrients.

Beet storage methods

In the cellar

The main ways to store beets in a cellar in winter:

  • In boxes of sand. In boxes without slots, you need to fill in sifted (preferably washed) river sand, which must first be dried in the sun or calcined in the oven. Pour 8-10 centimeters of sand at the bottom of the box, then put the root vegetables on it so that they do not touch each other. Then fill them with sand so that there is a 2-3 cm layer above the vegetables on top. Then the entire box is filled in a similar way. The condition of the roots should be checked every month. Slightly spoiled ones should be immediately removed, and the growing tops should be cut off. With this storage, beets will easily lie until spring.

  • In polyethylene bags with a volume of 35-40 kg with ventilation holes, leave the bags open so that moisture does not accumulate.
  • In a box of potatoes. Above it, you can put one layer of beetroot, which will receive the missing moisture from the potatoes located below.

  • In small perforated drawers for ventilation or in small pyramids on shelves. Drawers or shelves should be at least 15 cm above the floor.
  • In peat, sawdust or table salt, which are poured over the roots, like sand in boxes. When storing beets for the winter in a basement in sawdust, check them more often than once a month.
  • In boxes with cracks in the walls and bottom in bulk.
  • In clay. Make a thick solution of clay, dip each root crop in it, then dry it thoroughly. Then all the beets are packed into boxes.

Tips to Conserve Beets Better

  • If, before storing beets for the winter in the subfield, sprinkle root crops with sifted wood ash or crushed chalk, this will protect them from diseases and prevent the transmission of spoilage from decaying specimens to healthy ones.

  • It is advisable to store large and small root crops separately. If this is not possible, the smallest specimens are laid down, and the largest ones up.

  • To protect the beets from the spread of fungi and other pathogenic flora, plants with phytoncidal properties should be placed near it: horseradish, radish, basil, bitter wormwood, peppermint, fern leaves, etc.

In the apartment

Despite the fact that this is the least reliable option, many can only decide how to properly store beets for the winter in an apartment. The maximum period that these vegetables can withstand here is 3-4 months.

One of the best options for storing beets in an apartment is a warmed loggia, but even there root crops run the risk of freezing in severe frost. And if you try to heat this room, it will be very difficult to keep the temperature in a narrow range from 0 to 4 degrees. But even the imperfect conditions of the loggia are better than indoor ones. And the storage technology is the same as in the cellar - low boxes sprinkled with sand. Throughout storage, the dryness of the filler must be monitored.

To prevent the roots from freezing on the balcony, you can place them in a homemade insulating box, insulated with foam, or cover them with a warm blanket during severe frosts.

Less successful places for storing beets for the winter at home can be called a pantry, a change house, any dark space under furniture, as long as it is located away from heating radiators.

If you store beets in the refrigerator, then only tightly wrapping each piece in parchment paper or aluminum foil. In this form, she can hold out for 2-3 months.

Another way to store beets is to place them raw or boiled in the freezer. It is better to grate a raw root vegetable, and either leave the boiled one intact or cut into cubes (if it is supposed to be used in salads or similar dishes in the future). Place the blanks in bags or plastic containers in portions so that there is enough beets in one container for one dish. Otherwise, when re-freezing, the beets will lose their taste and valuable properties.

If you freeze whole beets, then a lot of ice forms inside them, and when defrosting, it will be difficult to cut them beautifully.

Good luck in preserving the beet harvest until spring!

How to save beets for the winter.

Beets, like any agricultural crop, differ in varieties of early, middle and late ripening.

The growth period is about 50-100 days.

Early varieties removed from the garden at the end of July. They are not designed for long-term storage.

Beetroot mid-season can be removed from the garden in September, it is well stored in winter.

Late ripening varieties are stored until spring, they are harvested before the first frosts.

You should not rush to harvest the root crop - only in the last phase of ripening, useful substances accumulate in it. But you can't keep ripe beets until frost. If the part protruding above the ground is caught by frost, then the vegetable will not survive until spring.

The maturity of beets is determined by their appearance. Most of the crop should reach the average size of the variety being grown. The lower part of the tops of a mature plant is dry or has a characteristic yellow color. And one more trick of correct collection - it is worth removing the root crop with a pitchfork.

Storage methods

Immediately from the garden, you cannot lower the beets into the basement or put them in the refrigerator. It needs to be prepared for long-term storage.

The tops are cut in the garden, leaving petioles about 1 cm long. Longer tops will begin to grow actively by winter.

The harvested crop is dried, cleaned of dirt and sorted. Lateral roots must be removed to avoid damage to the root crop. Shorten the main root to a length of 7 cm.

You can store beets outside, but for this you need to dig a hole. Indoors, beets are stored in basements, cellars, dark rooms, in the refrigerator or on the balcony.

Storage containers can be baskets, bags or boxes.

It is better to store beets in a cellar or basement, where the temperature does not rise above +2 degrees.

An increase in temperature to +4 ° C causes the growth of tops, which negatively affects the preservation of the vegetable.

Beets are lowered into the basement and stored in bulk.In this case, it is better to lay a wooden crate on the floor, and make small ventilation recesses in the walls of the room.

Another way to retain moisture is to store it in sand boxes. But the sand needs to be roasted in the sun. Pour the beets so that there is no contact between the vegetables, and the top layer covering the root crop should be more than 2 cm. Instead of sand, you can use kitchen salt or wood ash.

To exclude the possibility of infection during storage, sprinkle with chalk powder on the beets. Peat, shavings and sawdust are considered suitable for storage.

Beets can still be packaged and stored in plastic bags, but they must not be tied to allow free air access.

You can store beets in an apartment from three to four months. Beets can be placed in a sand box. In severe night frosts, the box with beets is covered with a cotton blanket.

During the entire storage period, the sand should be checked so that it does not become wet.

FROM guard with intramural beets can also be used with clay. To do this, you need to prepare a solution of water and oily clay. Add clay to the water so that the mixture is like sour cream.

Then each beet is dipped separately into the solution and allowed to dry. After the first layer has completely solidified, the procedure is repeated. So the beets will last until spring.

If you properly prepare the beets and organize storage, then you can use the harvest until the next summer season.
